Banana-Strawberry Quick Bread


1-1/2 cups flour
¼ cup stevia baking blend
2 tablespoons brown sugar
1 teaspoon baking soda
¼ teaspoon salt
¼ teaspoon cinnamon
1 large ripe banana, mashed
2 eggs, beaten
½ cup reduced-fat vanilla yogurt
½ cup ripe, mashed strawberries
½ cup chopped walnuts


Combine flour, stevia blend, brown sugar, baking soda, salt and cinnamon in a bowl. Set aside.

In a large bowl, stir together banana, eggs, yogurt and strawberries. Stir in flour mixture until incorporated. Do not beat. Fold in walnuts.

Spoon batter into well-greased 8-1/2-by-4-1/2-inch loaf pan. Bake in preheated 350-degree oven for 50 minutes or until top of bread is golden brown (this recipe has sugar and will brown), and toothpick inserted in center of bread comes out clean. Cool bread in pan for 10 minutes. Turn out onto wire rack to cool completely.
