Butterbean Hummus

Ingredients:

3 bacon strips
2 cans large butterbeans, drained and rinsed
2 tablespoons water
1 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons olive oil
1 teaspoon green onions, thinly sliced
1/4 teaspoon paprika

Directions:

In a medium sauté pan, cook bacon strips over low heat. After bacon has cooked, drain on paper towel. Break bacon strips into small pieces and set aside.

Increase heat to medium, add butterbeans and cook for 5 minutes. Remove pan from heat and puree butterbeans in a food processor for 1 minute. Add water and process until smooth. Scrape mixture into a bowl and stir in garlic powder and salt.

To assemble, spoon bean mixture on a serving dish and smooth with back of spoon. Drizzle olive oil over hummus. Sprinkle with bacon bits, green onions and paprika. Serve butterbean hummus with corn chips (Fritos) or pita chips.
