The following recipe is packed with healthful ingredients, but you’ll probably notice the great taste first.
1 (15-ounce) can black beans, rinsed and drained
1 celery rib, trimmed and thinly sliced
1 tablespoon finely chopped Italian parsley
1 cup cherry tomatoes, halved
1/8 teaspoon salt or to taste
1/8 teaspoon pepper or to taste
1 tablespoon white wine vinegar
1 tablespoon vegetable or chicken broth
1 tablespoon olive oil
1/4 cup crumbled gorgonzola or other blue cheese
Combine beans, celery and Italian parsley in a salad bowl. Stir gently but well to mix. Add cherry tomatoes. Combine the salt, pepper, vinegar, broth and oil in a small cup. Stir well and pour over the salad. Stir gently to mix. Sprinkle cheese over the salad. Serves 2.
